• 8 cups canola oil
• 4 large russet potatoes
• Gourmet Fries Seasonings Salt & Garlic Pepper (or your chosen flavor of Gourmet Fries Seasonings)
• Special Equipment: mandolin, deep-fry thermometer
Fill a medium bowl with cold water. Fill a heavy deep pot with oil and heat to 390°.
Slice potatoes into paper thin slices, approximately 1/8-inch thick, using a mandolin.
As potatoes are sliced, immediately place them in water to prevent them from discoloring.
When done, remove the potatoes from the water in batches and blot dry on paper towels.
Carefully add potatoes to oil making sure that they aren't stuck together.
Cook potatoes, gently stirring with tongs or a strainer, for approximately 3 to 4 mintues, or until golden brown and crispy.
Remove and place on a paper towel-lined sheet pan and immediately sprinkle with a pinch of Salt & Garlic Pepper Gourmet Fries Seasonings or your chosen falvor.
Check oil temperature and repeat with the remaining potatoes until all are cooked.
Serve immediately or allow them to cool completely and store in an airtight container for up to 2 days.
